Remember about the Queen's Jubilee day that was celebrated just a few days ago? I know I'm not a British--though I have a mixed of it--but I still want to celebrate it anyway :) So I decided to show you a really easy, effective and patriotic little baked treat to your Jubilee tea party. The recipe we will be using is my basic Victoria sponge which can be found on some webs, only difference is you'll be placing the mixture into two tins (square or rectangle) then once baked cut each layer of sponge into squares. Fill as before, dust with a little powdered sugar and add any Jubilee inspired decoration as you please.

Sorry this post is a little late but I've been a bit engrossed with Jubilee festivities this year, ha! I still celebrated the Golden Jubilee 10 years ago when me and my family lived in North Yorkshire. Such a beautiful life... :) Happy belated Golden Jubilee to the Queen!
